Ingredients

  • 1 large ripe avocado
  • ½ cup frozen or canned corn
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon freshly squeezed lime juice
  • ½ teaspoon cumin powder
  • ¼ teaspoon chili powder
  • Salt and black pepper to taste
  • 4 large flour tortillas (10-inch)

Instructions

  1. Mash the avocado in a bowl with lime juice.
  2. Add black beans, corn, red onion, and cilantro to the avocado.
  3. Season with cumin, chili powder, salt, and pepper; fold gently.
  4. Warm tortillas in a skillet or microwave.
