- 1 cup Greek yogurt
- 1/2 cup peanut butter
- 1/4 cup honey
- 1 cup oats
- 1/2 tsp vanilla extract
- 1/4 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine Greek yogurt, peanut butter, and honey until smooth.
- Add the oats, vanilla extract, and baking soda. Stir until everything is well incorporated.
- Using a spoon, drop dollops of the cookie dough onto a lined baking sheet.
- Bake for 12-15 minutes until the edges are lightly golden.
- Allow the cookies to cool slightly on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Add dark chocolate chips or different nut butters for variations.
