For the crust:

2 1/2 cups all-purpose flour

1 cup cold unsalted butter, cubed

1/2 tsp salt

1 tbsp sugar (optional)

68 tbsp ice water

For the filling:

67 cups sliced apples (Granny Smith, Honeycrisp, Fuji mix recommended)

1/2 cup granulated sugar

1/4 cup brown sugar

1 1/2 tsp ground cinnamon

1/4 tsp nutmeg

Pinch of allspice (optional)

1 tbsp lemon juice

2 tbsp cornstarch or flour

1 tsp Vanilla Flavor

Pinch of salt

For the finish:

1 egg + 1 tbsp water or milk (egg wash)

2 tbsp coarse sugar (for sprinkling)


Instructions

1. Make crust: Mix flour, salt, and sugar. Cut in cold butter until coarse crumbs form. Add ice water gradually until dough comes together. Divide into 2 discs, wrap, and chill 30+ minutes.

2. Prepare filling: Peel and slice apples. Toss with sugars, cinnamon, nutmeg, allspice, lemon juice, cornstarch, Vanilla Flavor, and salt. Let sit 15–20 minutes.

3. Preheat oven to 425°F (220°C). Roll out one dough disc and fit into 9-inch pie dish, leaving slight overhang.

4. Fill crust with apple mixture, mounding slightly in center.

5. Roll out second disc for top crust. Place over filling or make lattice. Cut slits if using full crust.

6. Seal and crimp edges. Brush with egg wash and sprinkle with coarse sugar.

7. Bake 15 minutes at 425°F, then reduce to 375°F (190°C) and bake 45–55 minutes until crust is golden and filling bubbles.

8. Cool completely at least 3–4 hours before slicing.

Notes

Mix tart and sweet apples for best flavor.

Blind bake bottom crust for extra crispness.

Tent edges with foil if browning too quickly.

Try variations: add cranberries, caramel drizzle, or streusel topping.

Serve with vanilla ice cream, whipped cream, or sharp cheddar for a traditional twist.
