  • 1 teaspoon Baking Soda
  • 1 teaspoon Cream of Tartar
  • 0.5 teaspoon Fine Sea Salt
  • 5 grams Cornstarch
  • 66 grams Cinnamon Sugar Mixture

Instructions

  1. Prepare the Caramelized Apples: In a saucepan, combine your diced apples, dark brown sugar, ground cinnamon, a pinch of salt, and freshly squeezed lemon juice. Cook over medium heat until the apples are soft, about 5-7 minutes. Set aside to cool.
  2. Brown the Butter: In a separate pot, melt the unsalted butter over medium heat until golden brown. Remove from heat and let it cool slightly.
  3. Make the Dough: In a mixing bowl, combine the browned butter and granulated sugar, mixing until creamy. Add the vanilla and egg, beating until well combined.
  4. Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, cream of tartar, fine sea salt, and cornstarch.
  5. Mix Together: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Fold in the cooled caramelized apples.
  6. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the Oven: While the dough chills, preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  8. Prepare Cinnamon Sugar: In a small bowl, mix the granulated sugar and ground cinnamon.
  9. Shape the Cookies: Once chilled, scoop tablespoons of dough, roll into balls, and coat in the cinnamon sugar mixture. Place onto the prepared baking sheet.
