A quick and delicious baked cod dish in a creamy coconut lemon sauce, perfect for busy weeknights.

- 4 fillets Cod (thick, white cod fillets)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Olive Oil (for sautéing)
- 1 medium Onion (sauté until translucent)
- 2 cloves Garlic (minced)
- 1 tablespoon Ginger (grated)
- 1 can Coconut Milk (full-fat preferred)
- 3 tablespoons Lemon Juice (freshly squeezed)
- 1 teaspoon Lemon Zest
Instructions
- Preheat the oven to 375°F (190°C).
- Season the cod fillets with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat. Add the onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, and cook for another minute.
- Pour in the coconut milk, and mix in lemon juice and lemon zest. Let it simmer for a few minutes.
- Place the cod fillets in a baking dish. Pour the coconut lemon cream sauce over the fish.
- Bake in the oven for about 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
Notes
Serve hot with steamed rice, quinoa, or a fresh green salad. Sprinkle fresh herbs for added flavor. For leftovers, refrigerate in an airtight container for up to 2 days.
