- 2 pounds small potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 450°F (232°C).
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and let cool slightly.
- On a baking sheet, place the potatoes and gently smash them with a fork or potato masher.
- Drizzle with olive oil and sprinkle with minced garlic, Parmesan cheese, salt, and pepper.
- Bake for 20-25 minutes, or until golden and crispy.
- Garnish with chopped parsley and serve warm.
