- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook the rice according to the package instructions and set aside.
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and sauté until golden brown and cooked through (about 6-8 minutes).
- In a separate bowl, mix mayonnaise, sriracha, honey, garlic powder, and lime juice to make the sauce.
- Add the mixed veggies to the skillet with the chicken and sauté for an additional 2-3 minutes until the veggies are tender but still crisp.
- Remove from heat and pour the sauce over the chicken and veggies, stirring to coat.
- Serve over warm rice and garnish with lime wedges, fresh herbs, or sesame seeds.
Notes
For added crunch, consider topping the bowl with chopped peanuts or sesame seeds. Adjust the sriracha to your preference for spice.
