BBQ Chicken Quesadillas

Description

Delicious BBQ Chicken Quesadillas made with tender chicken, tangy barbecue sauce, and melted cheese, all in crispy tortillas.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, combine the cooked shredded chicken with the barbecue sauce and stir gently until well coated.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle half of the shredded cheese on one side.
  4. Spread half of the BBQ chicken mixture over the cheese.
  5. Top with more cheese and place another tortilla on top.
  6. Cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
  7. Repeat with remaining tortillas and filling.
  8. Slice quesadillas into wedges and serve warm with toppings.

Notes

Great served with salsa, guacamole, or sour cream. Can be customized with additional toppings.
