Description

Delicious chocolate chip cookies with a perfect balance of gooey chocolate and chewy dough, made even better with browned butter.


Ingredients

  • 3/4 cup (168 g) unsalted butter, browned
  • 1 cup (200 g) packed light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg
  • 1 large egg yolk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 3/4 cup (220 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • Flaky sea salt for sprinkling
  • 1 1/2 cups (255 g) semi-sweet chocolate chips or roughly chopped chocolate

Instructions

  1. Brown the butter in a small saucepan over medium-low heat until golden brown, about 5 to 7 minutes. Cool slightly before using.
  2. In a large bowl, mix the cooled brown butter with brown sugar and granulated sugar until well combined. Add the egg, egg yolk, and vanilla extract and stir until smooth.
  3. Gradually add flour, baking soda, and kosher salt, mixing gently with a spatula until no flour streaks remain.
  4. Fold in the semi-sweet chocolate chips carefully.
  5. Cover the bowl with plastic wrap and chill dough in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12 to 13 minutes until puffed and lightly golden on the edges.
  8. Remove from oven, sprinkle with flaky sea salt if desired, and let cool on the baking sheets for a few minutes before transferring to a wire rack.

Notes

Chilling the dough is crucial for better texture. For added flavor, use high-quality chocolate.
