- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 2 tablespoons fresh lemon juice
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat together the softened butter and cream cheese until smooth.
- Add in the powdered sugar, mixing until well combined.
- Beat in the egg, vanilla extract, lemon extract, and fresh lemon juice until smooth.
- Whisk together the flour, baking powder, and salt in another bowl.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the lemon zest.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are slightly golden but the centers are still gooey.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a different twist, try adding white chocolate chips or chopped nuts to the dough.
