Description

Soft, rich cookies bursting with lemon goodness and a gooey center, coated in powdered sugar.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat together the softened butter and cream cheese until smooth.
  3. Add in the powdered sugar, mixing until well combined.
  4. Beat in the egg, vanilla extract, lemon extract, and fresh lemon juice until smooth.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the lemon zest.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes, or until the edges are slightly golden but the centers are still gooey.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a different twist, try adding white chocolate chips or chopped nuts to the dough.
