- 12 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup black olives, sliced
- 1/2 cup red onion, diced
- 1 cup salami, diced
- 1/2 cup pepperoncini, sliced
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the cheese tortellini according to package instructions until al dente. Drain and rinse with cold water.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumbers, black olives, red onions, salami, and pepperoncini.
- Pour the Italian dressing over the salad and toss gently to coat.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Garnish with fresh basil just before serving.
Notes
