Description
A delicious, healthy banana bread that is vegan and gluten-free, sweetened with ripe bananas, coconut sugar, and maple syrup.

- 3 ripe bananas (about 1 ½ cups mashed banana)
- ⅓ cup coconut sugar
- ¼ cup maple syrup
- ¼ cup non-dairy milk
- 2 teaspoons vanilla extract
- 1 teaspoon apple cider vinegar
- 3 tablespoons coconut oil (melted)
- 2 cups oat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- ⅓ cup vegan chocolate chips (plus more for topping)
- ¼ cup walnuts (chopped)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper.
- Mash the ripe bananas in a large bowl until smooth, then mix in the coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.
- Add the oat flour, baking powder, baking soda, cinnamon, nutmeg, salt, and vegan chocolate chips to the wet mixture, and stir gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra chocolate chips and chopped walnuts on top if desired.
- Bake in the preheated oven for 60-65 minutes, checking for doneness with a toothpick.
- Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
Notes
For a nut-free version, omit the walnuts and consider adding sunflower seeds for crunch.
