Ingredients

  • 3 ripe bananas (about 1 ½ cups mashed banana)
  • ⅓ cup coconut sugar
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
  • 3 tablespoons coconut oil (melted)
  • 2 cups oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ⅓ cup vegan chocolate chips (plus more for topping)
  • ¼ cup walnuts (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth, then mix in the coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.
  3. Add the oat flour, baking powder, baking soda, cinnamon, nutmeg, salt, and vegan chocolate chips to the wet mixture, and stir gently until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle extra chocolate chips and chopped walnuts on top if desired.
  5. Bake in the preheated oven for 60-65 minutes, checking for doneness with a toothpick.
  6. Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Notes

For a nut-free version, omit the walnuts and consider adding sunflower seeds for crunch.
