Description

Delicious cookies that blend sweet blueberries with creamy white chocolate for a delightful treat.


Ingredients

  • ⅔ cup frozen blueberries
  • ⅔ cup cold unsalted butter, sliced into cubes
  • ¾ cup granulated sugar
  • 2 cups all-purpose flour or gluten-free flour
  • 1 tsp baking powder
  • Pinch sea salt
  • ¾ cup white chocolate chips

Instructions

  1. Microwave the blueberries for 30 seconds or until thawed. Set aside. Do not drain.
  2. Add the cold butter cubes and sugar to the stand mixer. Beat on high until combined, about 2 minutes.
  3. Incorporate the thawed blueberries and any blueberry juice. Beat to combine until mostly puréed.
  4. Stir in the flour, baking powder, and sea salt.
  5. Fold in the white chocolate chips. Place the bowl in the fridge for 20 minutes while the oven preheats.
  6. Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.
  7. Scoop balls of dough onto the pan, pushing down slightly. These cookies do not spread much.
  8. Bake for 10-12 minutes or until the cookies are set in the middle.
  9. Remove from the oven and allow to cool on the pan for 10 minutes before transferring to a wire rack.

Notes

For best texture, ensure butter is cold. Do not overmix the dough after adding flour.
