Description
A delicious and easy Blueberry Lemon French Toast Casserole made the night before, perfect for leisurely brunches or special occasions.

- 1 (8 oz) cream cheese
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon vanilla extract
- 2 cups blueberries
- 2 loaves French bread, cubed
- 2 cups milk
- 8 large eggs
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 lemon (zest + 2 tablespoons juice)
Instructions
- Mix the cream cheese, powdered sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract in a bowl until smooth.
- Gently fold in 1 cup of blueberries, 1 tablespoon of lemon juice, and some lemon zest into the cream cheese mixture.
- Layer half of the cubed French bread in a greased 10×14-inch baking dish and spread the cream cheese filling evenly over the bread.
- Add the remaining cubed bread on top of the cream cheese layer.
- In another bowl, whisk together 2 cups of milk, 8 eggs, 2 teaspoons of vanilla, 1 teaspoon of cinnamon, ½ teaspoon of nutmeg, remaining lemon zest, and 1 tablespoon of lemon juice.
- Pour the egg mixture evenly over the layered bread and sprinkle the remaining blueberries on top.
- Cover the dish with foil and chill overnight in the fridge.
- Preheat oven to 375°F (190°C). Bake the casserole covered for 45 minutes, then remove foil and bake for an additional 30 minutes until golden brown.
Notes
Serve warm or at room temperature; dust with powdered sugar or drizzle with maple syrup for extra sweetness.
