A delicious and creamy breakfast casserole combining blueberries and zesty lemon flavors, perfect for brunch or special occasions.

- 1 (8 oz) package cream cheese
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon vanilla extract
- 2 cups blueberries (fresh or frozen)
- 2 loaves of French bread, cubed
- 2 cups milk
- 8 large eggs
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 lemon (zest and juice of 2 tablespoons)
Instructions
- Mix cream cheese, powdered sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract until smooth.
- Gently fold in 1 cup of blueberries, 1 tablespoon of lemon juice, and lemon zest into the cream cheese mixture.
- Layer half of the cubed French bread in a greased 10×14 inch baking dish.
- Spread the cream cheese mixture evenly over the first layer of bread.
- Top with the remaining bread cubes.
- In another bowl, whisk together 2 cups of milk, 8 eggs, 2 teaspoons of vanilla extract, cinnamon, nutmeg, remaining lemon zest, and 1 tablespoon of lemon juice.
- Pour the egg mixture evenly over the bread.
- Sprinkle remaining blueberries on top.
- Cover with foil and refrigerate overnight.
- The next morning, preheat the oven to 375°F (190°C) and bake for 45 minutes covered with foil. Then remove foil and bake for an additional 30 minutes until golden brown.
Notes
Use day-old French bread for best results. You can customize with different toppings like whipped cream or fresh fruit.
