Description

A delicious and creamy breakfast casserole combining blueberries and zesty lemon flavors, perfect for brunch or special occasions.


Ingredients

  • 1 (8 oz) package cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract
  • 2 cups blueberries (fresh or frozen)
  • 2 loaves of French bread, cubed
  • 2 cups milk
  • 8 large eggs
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 lemon (zest and juice of 2 tablespoons)

Instructions

  1. Mix cream cheese, powdered sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract until smooth.
  2. Gently fold in 1 cup of blueberries, 1 tablespoon of lemon juice, and lemon zest into the cream cheese mixture.
  3. Layer half of the cubed French bread in a greased 10×14 inch baking dish.
  4. Spread the cream cheese mixture evenly over the first layer of bread.
  5. Top with the remaining bread cubes.
  6. In another bowl, whisk together 2 cups of milk, 8 eggs, 2 teaspoons of vanilla extract, cinnamon, nutmeg, remaining lemon zest, and 1 tablespoon of lemon juice.
  7. Pour the egg mixture evenly over the bread.
  8. Sprinkle remaining blueberries on top.
  9. Cover with foil and refrigerate overnight.
  10. The next morning, preheat the oven to 375°F (190°C) and bake for 45 minutes covered with foil. Then remove foil and bake for an additional 30 minutes until golden brown.

Notes

Use day-old French bread for best results. You can customize with different toppings like whipped cream or fresh fruit.
