Description

These Brownie Cookies combine the best of cookies and brownies with chewy centers, crackly tops, and intense chocolate flavor. Perfect for any occasion!


Ingredients

  • 200 g dark chocolate
  • 120 g unsalted butter
  • 100 g granulated sugar
  • 100 g soft light brown sugar
  • 2 eggs
  • 150 g plain flour
  • 25 g cocoa powder
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • Flaky salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and line two large baking trays with baking paper.
  2. Melt the dark chocolate and unsalted butter together in a medium pot over medium heat, stirring until completely smooth. Set aside to cool slightly.
  3. Whisk together the eggs, granulated sugar, and brown sugar in a large bowl at high speed for about 5 minutes until light in color and doubled in volume.
  4. Fold in the cooled chocolate and butter mixture until just combined.
  5. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the mixture until no flour is visible.
  6. Transfer the batter into a piping bag or use an ice cream scoop to form 8 mounds on the lined trays, leaving space for spreading.
  7. Bake for about 18-20 minutes, until the edges are set but the centers remain soft. Optional: sprinkle flaky salt on top while warm.
  8. Cool the cookies on the tray for about 20 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
