- 200 g dark chocolate
- 120 g unsalted butter
- 100 g granulated sugar
- 100 g soft light brown sugar
- 2 eggs
- 150 g plain flour
- 25 g cocoa powder
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- Flaky salt, for sprinkling (optional)
Instructions
- Preheat your oven to 180°C (350°F) and line two large baking trays with baking paper.
- Melt the dark chocolate and unsalted butter together in a medium pot over medium heat, stirring until completely smooth. Set aside to cool slightly.
- Whisk together the eggs, granulated sugar, and brown sugar in a large bowl at high speed for about 5 minutes until light in color and doubled in volume.
- Fold in the cooled chocolate and butter mixture until just combined.
- Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the mixture until no flour is visible.
- Transfer the batter into a piping bag or use an ice cream scoop to form 8 mounds on the lined trays, leaving space for spreading.
- Bake for about 18-20 minutes, until the edges are set but the centers remain soft. Optional: sprinkle flaky salt on top while warm.
- Cool the cookies on the tray for about 20 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
