- 4 Roma tomatoes, chopped
- ¼ cup basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
- 8 oz feta cheese, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 garlic clove, minced
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Salt, to taste
- More basil leaves, chopped, for garnish
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated, for topping
Instructions
- Wash the Roma tomatoes, remove the stems, and chop them into small pieces.
- In a medium bowl, combine the chopped tomatoes, chopped basil leaves, and minced garlic.
- Drizzle in the extra virgin olive oil and balsamic vinegar.
- Season with salt and mix gently. Let sit for 10-15 minutes.
- In a separate bowl, add the crumbled feta, softened cream cheese, and sour cream.
- Add the second minced garlic clove, lemon juice, and tablespoon of olive oil.
- Mix until smooth. Adjust salt if needed.
- In a serving dish, layer the cheese mixture, then spoon the bruschetta topping over it.
- Garnish with more basil, red pepper flakes, and grated Parmesan.
Notes
Use fresh ingredients for the best flavor. Prep the cheese and bruschetta mixture in advance, but assemble just before serving.
