- 4 Roma tomatoes, chopped
- ¼ cup basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
- 8 oz feta cheese, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 garlic clove, minced
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Salt, to taste
- More basil leaves, chopped (for garnish)
- Red pepper flakes (for garnish)
- Parmesan cheese, freshly grated (for garnish)
Instructions
- Wash and chop the Roma tomatoes, removing seeds to reduce moisture.
- In a bowl, combine chopped tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and salt. Mix well and let sit for 10-15 minutes.
- In another bowl, mix together feta cheese, cream cheese, and sour cream until creamy.
- Add the second minced garlic clove, lemon juice, and olive oil to the cheese mixture. Season with salt to taste.
- Spread the cheese mixture evenly in a serving dish as the base.
- Add the bruschetta mixture on top of the cheese layer.
- Garnish with chopped basil, red pepper flakes, and grated Parmesan before serving.
Notes
Serve with a variety of dippers like baguette slices, crackers, or vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
