Description

Creamy and flavorful Butter Chicken, a popular Indian dish made with tender marinated chicken in a rich tomato and cream sauce.


Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread, for serving
  • Steamed rice, for serving

Instructions

  1. In a bowl, marinate the chicken pieces with salt, garlic powder, sweet paprika, and curry powder. Add Greek yogurt, mix well, and cover. Let it marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt 2 tablespoons of butter. Add minced garlic and diced onion and sauté for about 5 minutes until fragrant.
  4. Add the tomato sauce, sugar, salt, and black pepper. Stir and let it simmer for a few minutes.
  5. Pour in the heavy cream, add cayenne pepper, garam masala, and extra curry powder. Simmer for about 10 minutes until thickened.
  6. Stir in the remaining tablespoon of butter until melted. Return the cooked chicken to the skillet and simmer for a few more minutes.
  7. Garnish with parsley and serve warm with naan bread or steamed rice.

Notes

For added flavor, let the dish sit overnight in the fridge before serving.
