- 3 cups all-purpose flour
- 2 teaspoons aluminum-free baking powder
- 1 cup unsalted butter, room temperature
- ½ teaspoon kosher salt
- 1 cup granulated sugar
- 1 large egg, room temperature
- 2 teaspoons pure vanilla extract
- 1 cup unsalted butter, room temperature (for frosting)
- 4 cups confectioners’ sugar
- 1 teaspoon pure vanilla extract (for frosting)
- 1 teaspoon pure almond extract
- ¼ cup heavy whipping cream
- Pinch of salt (for frosting)
Instructions
- In a medium bowl, combine the flour and baking powder.
- In a large mixing bowl, beat the butter and kosher salt until creamy.
- Gradually add granulated sugar, mixing until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Slowly add the flour mixture to the wet ingredients and mix until the dough comes together.
- Wrap the dough in plastic wrap and chill for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough to 1/4 inch thickness and cut out shapes.
- Place on a baking sheet and bake for 7-8 minutes or until edges are golden.
- For frosting, beat butter until creamy, then add confectioners’ sugar, vanilla, almond extract, heavy cream, and salt. Beat until fluffy.
- Once cookies are cool, decorate with frosting and any desired toppings.
Notes
Chill the dough to prevent spreading. Use room temperature ingredients for easy mixing.
