- 3 cups all-purpose flour (375g)
- 2 teaspoons aluminum-free baking powder
- 1 cup unsalted butter, at room temperature (226g)
- ½ teaspoon kosher salt
- 1 cup granulated sugar (200g)
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 4 cups confectioners’ sugar (480g)
- 1 teaspoon pure vanilla extract (for frosting)
- 1 teaspoon pure almond extract (optional for frosting)
- ¼ cup heavy whipping cream
- A pinch of salt (for frosting)
Instructions
- In a medium bowl, whisk together the all-purpose flour and baking powder; set aside.
- Using a mixer, cream the butter and kosher salt until fluffy.
- Gradually incorporate the granulated sugar and mix until smooth.
- Add in the egg and vanilla extract, mixing to blend well.
- Slowly incorporate the flour mixture, mixing until a soft dough forms.
- Chill the dough for at least 30 minutes.
- Preheat your oven to 375°F (190°C). Roll out the chilled dough to about ¼ inch thickness and cut into desired shapes.
- Bake for 7-8 minutes, until puffy but not browned. Let cool on a rack.
- For the buttercream, beat the butter until creamy, then gradually add the confectioners’ sugar, vanilla, almond extract, and heavy whipping cream, mixing until fluffy.
- Decorate the cooled cookies with buttercream and desired decorations.
Notes
For best results, ensure butter is at room temperature and don’t skip the chilling step.
