Ingredients

  • 3 cups all-purpose flour (375g)
  • 2 teaspoons aluminum-free baking powder
  • 1 cup unsalted butter, at room temperature (226g)
  • ½ teaspoon kosher salt
  • 1 cup granulated sugar (200g)
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 cups confectioners’ sugar (480g)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 teaspoon pure almond extract (optional for frosting)
  • ¼ cup heavy whipping cream
  • A pinch of salt (for frosting)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour and baking powder; set aside.
  2. Using a mixer, cream the butter and kosher salt until fluffy.
  3. Gradually incorporate the granulated sugar and mix until smooth.
  4. Add in the egg and vanilla extract, mixing to blend well.
  5. Slowly incorporate the flour mixture, mixing until a soft dough forms.
  6. Chill the dough for at least 30 minutes.
  7. Preheat your oven to 375°F (190°C). Roll out the chilled dough to about ¼ inch thickness and cut into desired shapes.
  8. Bake for 7-8 minutes, until puffy but not browned. Let cool on a rack.
  9. For the buttercream, beat the butter until creamy, then gradually add the confectioners’ sugar, vanilla, almond extract, and heavy whipping cream, mixing until fluffy.
  10. Decorate the cooled cookies with buttercream and desired decorations.

Notes

For best results, ensure butter is at room temperature and don’t skip the chilling step.
