These delightful rolls are filled with roasted garlic, butter, and gooey mozzarella, making them a perfect side dish or snack.

- 1 garlic head
- Sprinkle of salt
- 30 grams olive oil
- 50 grams butter
- 1 tablespoon fresh parsley
- 90 grams warm milk
- 7 grams active dry yeast
- 25 grams honey
- 200 grams all-purpose flour
- 50 grams bread flour
- 20 grams milk powder (optional)
- 25 grams butter
- 2 egg yolks
- 1 1/2 teaspoon salt
- 1 tablespoon sugar
- 200 grams mozzarella cheese
- Garlic butter (from roasted garlic)
- 1 egg (for egg wash)
Instructions
- Roast Garlic: Cut the top off the garlic head, drizzle with olive oil, sprinkle with salt, wrap in foil, and roast at 160°C (320°F) for 2 hours.
- Make Garlic Butter: Mix roasted garlic with softened butter, chopped parsley, and garlic oil; set aside.
- Prepare Yeast Mixture: Combine warm milk, active dry yeast, and honey; let sit for 10 minutes until frothy.
- Make Dough: In a bowl, combine all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, two egg yolks, and yeast mixture.
- Knead Dough: Knead on medium speed for 15-20 minutes until soft and smooth.
- Proof Dough: Place in a covered bowl in a warm area for 1 hour 30 minutes until doubled in size.
- Roll Out Dough: Roll to 1/4 cm thickness and spread garlic butter over it.
- Add Mozzarella: Sprinkle mozzarella cheese on the garlic butter and roll into a log.
- Cut Dough: Cut the log into 6 equal portions.
- Second Proof: Place on a baking sheet, cover, and proof for another 30 minutes until puffy.
- Bake: Preheat oven to 175°C (350°F), brush with egg wash, and bake for 20-25 minutes.
- Decorate: Brush with leftover garlic butter and sprinkle parsley before serving.

Best served warm. Store in an airtight container for up to 3 days or freeze for longer storage.
