Description

Soft, fluffy rolls packed with aromatic roasted garlic and melted mozzarella cheese, perfect for any meal or cozy night in.


Ingredients

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for the dough)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese (shredded)
  • Garlic butter
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 160°C (320°F) and roast the garlic for about 2 hours until buttery soft.
  2. Mix roasted garlic with softened butter, chopped parsley, and reserved garlic oil to create garlic butter.
  3. Prepare the yeast mixture by combining warm milk, active dry yeast, and honey; let sit for 10 minutes.
  4. In a large mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and yeast mixture; mix to form dough.
  5. Knead the dough at medium speed for 15 to 20 minutes until soft and smooth.
  6. Place the dough in a covered bowl to proof for 1 hour and 30 minutes in a warm place.
  7. Roll out the dough to about 1/4 cm thick, spread garlic butter evenly, then sprinkle mozzarella cheese on top.
  8. Roll the dough into a log and cut into 6 equal portions.
  9. Place rolls on a lined baking sheet, cover lightly, and let proof for 30 minutes.
  10. Brush rolls with egg wash and bake at 175°C (350°F) for 20 to 25 minutes until golden brown.
  11. Brush warm rolls with leftover garlic butter and garnish with chopped parsley before serving.

Notes

These rolls make a fantastic side for any meal or a delicious snack on their own. Serve warm with marinara or garlic dipping sauce for extra flavor.
