Description
A low-calorie, high-fiber cabbage fat-burning soup loaded with vegetables, herbs, and savory broth to support weight loss and boost energy.
Ingredients
1 medium head green cabbage, chopped
2 large onions, chopped
2 green bell peppers, chopped
6 carrots, sliced
4 celery stalks, sliced
1 (28 oz) can diced tomatoes, undrained
1–2 (15 oz) cans vegetable broth, low sodium
1 packet onion soup mix, low sodium
1 tsp dried oregano
1/2 tsp dried basil
Salt and black pepper, to taste
Optional: red pepper flakes, fresh parsley or cilantro
Instructions
1. In a large pot, sauté onions, bell peppers, celery, and carrots with a splash of water or a little olive oil for 5-7 minutes.
2. Add chopped cabbage and cook a few minutes until slightly wilted.
3. Stir in diced tomatoes with liquid and vegetable broth.
4. Add onion soup mix, oregano, basil, salt, and pepper. Stir well.
5. Bring to a boil, then reduce heat, cover, and simmer 30-45 minutes until vegetables are tender.
6. Taste and adjust seasoning with salt, pepper, or red pepper flakes.
7. Serve hot, garnished with fresh herbs if desired.
Notes
Keeps 3-4 days in the fridge or can be frozen for later.
