Description
A simple, low-calorie, high-fiber cabbage soup designed as part of a short-term diet plan for quick weight loss and body reset.
Ingredients
1 large head green cabbage, chopped
2 large onions, chopped
2 green bell peppers, chopped
1–2 cans (28 oz each) diced tomatoes with juice
1 bunch celery, chopped
2–3 carrots, peeled and sliced
6–8 cups vegetable broth (low sodium preferred)
1 packet onion soup mix (optional)
Salt and black pepper, to taste
Optional: garlic powder, dried thyme, bay leaf
Instructions
1. Chop all vegetables into bite-sized pieces.
2. In a large pot, sauté onions in a bit of olive oil until softened.
3. Add bell peppers and cook for 3-5 minutes.
4. Add cabbage, celery, carrots, diced tomatoes with juice, and vegetable broth.
5. Stir in onion soup mix if using, along with seasonings.
6. Bring to a boil, then reduce heat, cover, and simmer 30-45 minutes until vegetables are tender.
7. Adjust seasonings, remove bay leaf if used, and serve hot.
Notes
Add fresh herbs like parsley or cilantro before serving.
Sprinkle red pepper flakes for a spicy kick.
Add a squeeze of lemon juice for brightness.
Experiment with spices like cumin, turmeric, or smoked paprika.
