  • 8 ounces softened cream cheese
  • 4 ounces grated Gruyère cheese
  • 2 ounces grated Parmesan cheese
  • 1 large egg
  • 1/4 cup heavy cream or crème fraîche
  • Pinch of nutmeg (optional)
  • 1 box (14.1 ounces) refrigerated pie crusts
  • Fresh thyme sprigs for garnish
  • Balsamic glaze for drizzling

Instructions

  1. Caramelize the onions: Heat olive oil and butter in a skillet over medium heat. Add sliced onions, season with salt and sugar, and cook slowly, stirring frequently until golden brown (about 30-40 minutes). Stir in balsamic vinegar and thyme; set aside to cool slightly.
  2. Prepare the filling: In a mixing bowl, beat the cream cheese until smooth. Add in Gruyère, Parmesan, egg, heavy cream, and nutmeg. Combine thoroughly.
  3. Assemble the tarts: Preheat your oven to 375°F (190°C). Roll out the pie crusts and fit them into your tart pans. Fill with the cheese mixture, and then layer the caramelized onions on top.
  4. Bake: Transfer tarts to the oven and bake for 30 minutes, or until the filling is set and the crust is golden.
  5. Cool and garnish: Allow the tarts to cool slightly, garnish with fresh thyme sprigs, and drizzle with balsamic glaze.
