- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- Combine the grated carrots and zucchini in a mixing bowl.
- Whisk together the flour, sugars, baking powder, baking soda, salt, and cinnamon in another bowl.
- Add the vegetable oil, eggs, and vanilla to the dry ingredients and mix until combined.
- Fold in the grated carrots and zucchini.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the bars cool completely.
- Beat the cream cheese, powdered sugar, lemon juice, and lemon zest until smooth for the frosting.
- Spread the frosting over the cooled bars and slice into squares. Enjoy!
Notes
Squeeze out excess moisture from the grated zucchini to avoid soggy bars. You can add nuts or raisins for extra texture and flavor.
