Cheddar Bay Biscuit Seafood Pot Pie

Description

A delightful seafood pot pie topped with fluffy cheddar bay biscuits, bringing comfort food and seafood together in harmony.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz langostino tails or lobster
  • 8 oz jumbo lump crabmeat, cooked
  • 1 cup onions, chopped
  • 1/2 cup bell pepper, chopped
  • 1/4 cup celery, chopped
  • 1 tsp salt, plus more to taste
  • 1 tsp pepper, plus more to taste
  • Olive oil, for cooking
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp butter
  • 5 tbsp flour
  • 1 tbsp garlic, minced or paste
  • 1 tsp thyme
  • 1 tsp tarragon, dried
  • 1/2 tsp smoked paprika
  • 1 box Red Lobster Cheddar Bay Biscuit mix (11.36 oz)
  • 3/4 cup milk
  • 1/2 cup mild cheddar cheese, shredded
  • 1/4 cup butter, melted
  • 1 pouch garlic herb seasoning (from the box)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions, bell pepper, and celery. Sauté until the vegetables soften.
  2. Stir in shrimp, langostino, and crabmeat. Season with salt and pepper. Cook for about 5 minutes.
  3. In the same skillet, melt 4 tablespoons of butter. Add 5 tablespoons of flour, stirring for about 1 minute.
  4. Gradually whisk in 2 cups of chicken broth and 1 cup of heavy cream. Add garlic, thyme, tarragon, salt, pepper, and smoked paprika. Stir until thickened.
  5. Mix the melted butter with the garlic herb seasoning from the biscuit mix.
  6. Preheat your oven to 425°F (220°C). Pour the seafood filling into a baking dish.
  7. Prepare the biscuit mix according to the package instructions, adding the milk and shredded cheese. Spread the biscuit mix over the seafood filling.
  8. Drizzle the herb butter sauce on top and bake for about 20-25 minutes or until the biscuits are golden brown and cooked through.

Notes

Serve hot. Pairs well with a fresh green salad or steamed vegetables. Can be made ahead of time by preparing the filling and biscuit topping separately.
