Description
A creamy, healthy sweet potato soup blended with garlic and cheddar, full of flavor and comforting warmth.
Ingredients
2 lbs sweet potatoes (3–4 medium), peeled and diced
1 tablespoon olive oil or avocado oil
1 large onion, chopped
4 cloves garlic, minced
4 cups low-sodium vegetable or chicken broth
1/2 cup unsweetened almond milk or light coconut milk
1/2 cup shredded sharp cheddar cheese (or reduced-fat)
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and freshly ground black pepper to taste
Pinch of cayenne pepper (optional)
Instructions
1. Heat oil in a large pot over medium heat; sauté onion 5-7 minutes until softened.
2. Add garlic and cook 1 minute until fragrant.
3. Stir in diced sweet potatoes, smoked paprika, and dried thyme.
4. Pour in broth, bring to boil, then reduce heat and simmer 15-20 minutes until potatoes are tender.
5. Blend with immersion blender or in batches until smooth and creamy.
6. Stir in almond or coconut milk and shredded cheddar; heat gently until melted.
7. Season with salt and pepper to taste.
8. Serve warm, with optional garnishes like pumpkin seeds, chives, or croutons.
