Description

A warm and comforting soup combining ground beef, tender potatoes, rich beef broth, and creamy cheddar cheese, perfect for families.


Ingredients

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat for 5 to 7 minutes. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot, cooking until the onion is soft, about 3 to 5 minutes.
  3. Add the diced potatoes and beef broth, bring to a boil, then reduce heat and simmer for 15 to 20 minutes until potatoes are tender.
  4. Stir in heavy cream and half of the cheddar cheese until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with remaining cheddar cheese and fresh parsley.

Notes
