- 1 lb ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat for 5 to 7 minutes. Drain excess fat.
- Add chopped onion and minced garlic to the pot, cooking until the onion is soft, about 3 to 5 minutes.
- Add the diced potatoes and beef broth, bring to a boil, then reduce heat and simmer for 15 to 20 minutes until potatoes are tender.
- Stir in heavy cream and half of the cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with remaining cheddar cheese and fresh parsley.
