Delicious cheesy chicken pasta with tender chicken, creamy sauce, and plenty of melted cheese for the ultimate comfort food.
Ingredients
2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
Salt and black pepper to taste
1 tsp garlic powder
1 tsp onion powder
12 oz (about 340g) short pasta (penne, rotini, farfalle)
2 tbsp butter
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups whole milk
1/2 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 tsp dried Italian seasoning
Pinch red pepper flakes (optional)
Fresh parsley, chopped
Extra grated Parmesan cheese
Instructions
1. Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and onion powder. Cook until golden brown and cooked through, 5-7 minutes. Remove and set aside.
2. Cook pasta in salted boiling water according to package directions until al dente. Drain and set aside.
3. In the same skillet, melt butter over medium heat. Add garlic and sauté 1 minute. Whisk in flour, cook 1 minute. Gradually whisk in milk and chicken broth until smooth. Simmer until slightly thickened.
4. Reduce heat to low. Stir in cheddar, mozzarella, and Parmesan until melted and smooth. Add Italian seasoning, red pepper flakes, salt, and pepper to taste.
5. Add cooked chicken and pasta into sauce. Toss to coat evenly.
6. Serve hot, garnished with parsley and extra Parmesan.
Notes
Add vegetables like broccoli, mushrooms, or spinach.
Swap chicken for shrimp .
Try different cheeses such as Gruyère or smoked gouda.
Use cream instead of milk for a richer sauce.
