Ingredients

  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cup beef broth
  • 1 cup cooked rice (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
  3. Next, add the minced garlic and ground beef to the skillet. Cook until the beef is browned, about 5-7 minutes.
  4. Stir in the salt, black pepper, and paprika. Mix well to combine.
  5. Add the broccoli florets and beef broth to the skillet. Cover and cook for about 5-7 minutes until broccoli is tender.
  6. If using, stir in the cooked rice until everything is well combined.
  7. Finally, sprinkle the shredded cheddar cheese over the top, cover, and let it cook for an additional 2-3 minutes until the cheese is melted.

Notes

Pair with a side salad or crusty bread. For leftovers, store in an airtight container in the fridge for up to 3 days.
