Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned and drain excess fat.
  4. Add uncooked rice, beef broth, and cream of mushroom soup to the skillet. Season with salt, black pepper, and paprika. Stir to combine and bring to a boil.
  5. Reduce heat and let it simmer for 5 minutes.
  6. Transfer the mixture to the greased baking dish and spread evenly.
  7. Cover with aluminum foil and bake for 25 minutes.
  8. Remove foil, sprinkle with shredded cheddar cheese, and return to oven for another 10 to 15 minutes until cheese is melted and bubbly.
  9. Let cool slightly before garnishing with fresh parsley. Serve warm.
