Ingredients

- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup chopped vegetables (spinach, bell peppers, or onions)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or oil.
- In a bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the shredded cheese and chopped vegetables.
- Season with salt and pepper.
- Pour the egg mixture into the prepared muffin tins, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly browned on top.
- Let cool slightly before removing from the muffin tin. Enjoy warm or store in the fridge.
Notes
Experiment with different cheese and vegetable combinations for added flavor. Store in an airtight container in the fridge for 4-5 days or freeze for longer storage.
