Description

A quick and delicious meal combining tender chicken, hearty sweet potatoes, and fluffy rice into a colorful and nourishing bowl.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potato cubes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper, then spread on a baking sheet.
  3. Roast the sweet potatoes for about 25 minutes until tender and caramelized.
  4. In a skillet, heat the remaining olive oil, add the diced chicken, and season with salt and pepper.
  5. Cook the chicken for about 7-10 minutes until fully cooked and no longer pink.
  6. In a large bowl, combine the cooked rice, roasted sweet potatoes, and chicken, mixing well.
  7. Garnish with fresh parsley before serving.
