- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Prep Your Ingredients: Gather all the ingredients, wash the vegetables, and chop the bell peppers into bite-sized pieces. Thinly slice the carrots and chop the green onions.
- Cook the Noodles: Prepare Lo Mein noodles according to the package instructions. Drain and set aside.
- Sauté the Chicken: Heat a large skillet or wok over medium-high heat, add a little oil, then sauté the chicken for 6-8 minutes until golden brown. Remove from the skillet.
- Stir-Fry the Vegetables: In the same skillet, add the bell peppers, carrots, and green onions. Stir-fry for 3-4 minutes until tender but crunchy.
- Combine Everything: Add the chicken back to the skillet with the noodles, soy sauce, sesame oil, and minced garlic. Toss to mix well.
- Serve: Serve hot, garnished with extra green onions or sesame seeds if desired.
