Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Prep all ingredients by chopping the vegetables and slicing the chicken.
  2. Cook the lo mein noodles according to the package instructions until al dente, then drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken pieces until golden brown and no longer pink, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, stir-fry the bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
  5. Return the cooked chicken to the skillet. Add noodles, soy sauce, sesame oil, and minced garlic. Toss until well combined and heated through.
  6. Serve hot, drizzled with extra soy sauce if desired.

Notes
