Description

A quick and comforting dish featuring tender chicken, fresh vegetables, and savory noodles, perfect for busy weeknights.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Gather all your ingredients to streamline the cooking process.
  2. Chop your vegetables into bite-sized pieces; this will ensure even cooking.
  3. Prepare the lo Mein noodles according to package instructions until they reach an al dente texture. Drain and set aside.
  4. In a large skillet or wok, heat a splash of oil over medium-high heat.
  5. Add the chicken pieces, sautéing them until golden brown and no longer pink in the center—about 6-8 minutes. Remove from the skillet and set aside.
  6. Toss in the sliced bell peppers, carrots, and green onions into the same skillet. Stir-fry for about 3-4 minutes until they’re tender yet still crisp.
  7. Return the cooked chicken to the skillet. Now, add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined and heated throughout.
  8. Serve hot, drizzled with extra soy sauce if desired.

Notes

For added flavor, consider garnishing with sesame seeds or additional sliced green onions. Pair with steamed dumplings or cucumber salad.
