Description
A quick and comforting dish featuring tender chicken, fresh vegetables, and savory noodles, perfect for busy weeknights.
Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
Instructions
- Gather all your ingredients to streamline the cooking process.
- Chop your vegetables into bite-sized pieces; this will ensure even cooking.
- Prepare the lo Mein noodles according to package instructions until they reach an al dente texture. Drain and set aside.
- In a large skillet or wok, heat a splash of oil over medium-high heat.
- Add the chicken pieces, sautéing them until golden brown and no longer pink in the center—about 6-8 minutes. Remove from the skillet and set aside.
- Toss in the sliced bell peppers, carrots, and green onions into the same skillet. Stir-fry for about 3-4 minutes until they’re tender yet still crisp.
- Return the cooked chicken to the skillet. Now, add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined and heated throughout.
- Serve hot, drizzled with extra soy sauce if desired.
Notes
For added flavor, consider garnishing with sesame seeds or additional sliced green onions. Pair with steamed dumplings or cucumber salad.
