Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sautéing until softened.
  2. Stir in the garlic powder, thyme, salt, and pepper, cooking for an additional minute.
  3. Add the diced potatoes and chicken broth, bringing to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in the cooked chicken, heavy cream, and frozen peas, cooking until heated through.
  6. Adjust seasoning if necessary and serve hot.

Notes

For a healthier version, substitute heavy cream with a mixture of milk and cornstarch for thickening. You can also add more vegetables such as corn or green beans.
