Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sautéing until softened.
- Stir in the garlic powder, thyme, salt, and pepper, cooking for an additional minute.
- Add the diced potatoes and chicken broth, bringing to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the cooked chicken, heavy cream, and frozen peas, cooking until heated through.
- Adjust seasoning if necessary and serve hot.
Notes
For a healthier version, substitute heavy cream with a mixture of milk and cornstarch for thickening. You can also add more vegetables such as corn or green beans.
