Description

Ingredients

  • 1 lb shredded chicken
  • 1 cup ditalini pasta
  • 2 cups mixed veggies (carrots, celery, onions)
  • 8 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the garlic and mixed veggies. Sauté until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the ditalini pasta and cook according to package instructions.
  5. Stir in the shredded chicken, season with salt and pepper, and simmer for 5-10 minutes.
  6. Garnish with fresh parsley if desired, and serve hot.

Notes

Use leftover chicken to save time. Feel free to add more vegetables like peas or corn. Taste the soup before serving and adjust the seasoning if needed.
