- 2 grilled chicken breasts
- 1 cup cooked rice
- 1 cup black or pinto beans
- 1 cup diced tomatoes
- 1/2 cup corn
- 1/4 cup diced red onion
- 1 cup shredded lettuce
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Cheese (optional)
Instructions
- Season the grilled chicken breasts with smoky spices and slice them.
- Warm the tortillas on a skillet.
- In the center of each tortilla, layer rice, beans, grilled chicken, tomatoes, corn, red onion, lettuce, and drizzle with chipotle ranch dressing.
- Fold in the sides of the tortilla and then roll it up tightly.
- Serve immediately or grill the burritos for a few minutes to make them crispy.
