Description

A hearty and flavorful burrito packed with grilled chicken, beans, veggies, and a creamy chipotle ranch dressing.


Ingredients

  • 2 grilled chicken breasts
  • 1 cup cooked rice
  • 1 cup black or pinto beans
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1/4 cup diced red onion
  • 1 cup shredded lettuce
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Cheese (optional)

Instructions

  1. Season the grilled chicken breasts with smoky spices and slice them.
  2. Warm the tortillas on a skillet.
  3. In the center of each tortilla, layer rice, beans, grilled chicken, tomatoes, corn, red onion, lettuce, and drizzle with chipotle ranch dressing.
  4. Fold in the sides of the tortilla and then roll it up tightly.
  5. Serve immediately or grill the burritos for a few minutes to make them crispy.
