Instructions
- Preheat your oven to 250°F (120°C). Line two baking sheets with parchment paper.
- Ensure your mixing bowl and beaters are grease-free.
- Beat egg whites on medium speed until foamy.
- Add salt, then gradually add sugar, beating until stiff peaks form.
- Sift in cocoa powder and gently fold into the meringue.
- Add vanilla extract and fold until evenly mixed.
- If desired, fold in chocolate chips or chopped chocolate.
- Scoop or pipe meringue onto prepared baking sheets, spacing them 1 inch apart.
- Bake for about 1 hour until dry to the touch.
- Turn off the oven, leave the cookies inside with the door slightly open to cool completely.
- Store in an airtight container to keep fresh.

For the best results, use room temperature egg whites and high-quality cocoa powder. Store cookies away from humidity to maintain their crisp texture.
