- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate ganache (store-bought or homemade)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, cream the softened butter and sugars together until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Place the balls on the prepared baking sheet and make an indentation in the center of each ball with your thumb.
- Bake for 10-12 minutes, or until the edges are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
- Fill the indents with chocolate ganache.
Notes
Ensure ingredients are at room temperature for better mixing. Chill the dough if it’s too soft to handle.
