  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon until well combined.
  3. In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract into the butter mixture until smooth.
  5. Gradually mix the dry ingredients into the wet mixture, taking care not to over-mix.
  6. For the filling, combine the brown sugar and cinnamon in a small bowl.
  7. Place half of the dough on a piece of parchment paper, sprinkle it with the cinnamon filling, and roll it tightly to form a log.
  8. Slice the log into rounds and arrange them on a baking sheet lined with parchment.
  9. Bake for 10-12 minutes or until the cookies turn golden brown.
