Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon until well combined.
- In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract into the butter mixture until smooth.
- Gradually mix the dry ingredients into the wet mixture, taking care not to over-mix.
- For the filling, combine the brown sugar and cinnamon in a small bowl.
- Place half of the dough on a piece of parchment paper, sprinkle it with the cinnamon filling, and roll it tightly to form a log.
- Slice the log into rounds and arrange them on a baking sheet lined with parchment.
- Bake for 10-12 minutes or until the cookies turn golden brown.
