Ingredients

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. Cream the softened butter with both granulated and brown sugars until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating until smooth and creamy.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine the brown sugar and ground cinnamon for the filling.
  7. Spread half of the dough into a rectangle on parchment paper and sprinkle with the filling mixture.
  8. Roll the dough into a log shape and slice into rounds.
  9. Place slices on a baking sheet lined with parchment paper, leaving space between each cookie.
  10. Bake for 10-12 minutes, or until golden brown.

Notes
