- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- For the filling:
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Cream the softened butter with both granulated and brown sugars until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, beating until smooth and creamy.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- In a small bowl, combine the brown sugar and ground cinnamon for the filling.
- Spread half of the dough into a rectangle on parchment paper and sprinkle with the filling mixture.
- Roll the dough into a log shape and slice into rounds.
- Place slices on a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake for 10-12 minutes, or until golden brown.
Notes
Serve warm, great with coffee or tea. Can be stored at room temperature in an airtight container for up to a week.
