- 1 1/4 cup milk (regular or plant-based)
- 2 tbsp maple syrup
- 3 tsp baking powder
- 1 tsp vanilla extract
- 1 cup all-purpose flour (regular or gluten-free)
- 3 tsp cinnamon
- 4 tbsp softened butter (regular or plant-based)
- 1/2 cup brown sugar or coconut sugar
- 1/2 cup powdered sugar
- 2 tbsp melted butter (regular or plant-based)
- 2 oz cream cheese (regular or plant-based)
Instructions
- In a large bowl, mix the flour, baking powder, cinnamon, and brown sugar together.
- In another bowl, whisk the milk, maple syrup, vanilla extract, and softened butter until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- In a small bowl, mix 2 tablespoons of melted butter, 3 teaspoons of cinnamon, and remaining sugar until you get a smooth paste for the cinnamon swirl.
- Preheat a non-stick skillet over medium heat and grease it lightly.
- Pour about 1/4 cup of batter onto the skillet for each pancake and drizzle cinnamon swirl mixture on top.
- Cook until bubbles form, then flip and cook until golden brown.
- Mix cream cheese, melted butter, and powdered sugar until smooth for the icing.
- Stack pancakes and drizzle with cream cheese icing before serving.
Notes
For a smoother icing, use room temperature cream cheese and add milk if too thick.
