Description

Fluffy pancakes infused with cinnamon flavor, topped with a creamy icing for a delightful breakfast treat.


Ingredients

  • 1 1/4 cup milk (regular or plant-based)
  • 2 tbsp maple syrup
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (regular or gluten-free)
  • 3 tsp cinnamon
  • 4 tbsp softened butter (regular or plant-based)
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup powdered sugar
  • 2 tbsp melted butter (regular or plant-based)
  • 2 oz cream cheese (regular or plant-based)

Instructions

  1. In a large bowl, mix the flour, baking powder, cinnamon, and brown sugar together.
  2. In another bowl, whisk the milk, maple syrup, vanilla extract, and softened butter until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. In a small bowl, mix 2 tablespoons of melted butter, 3 teaspoons of cinnamon, and remaining sugar until you get a smooth paste for the cinnamon swirl.
  5. Preheat a non-stick skillet over medium heat and grease it lightly.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake and drizzle cinnamon swirl mixture on top.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Mix cream cheese, melted butter, and powdered sugar until smooth for the icing.
  9. Stack pancakes and drizzle with cream cheese icing before serving.

Notes

For a smoother icing, use room temperature cream cheese and add milk if too thick.
