Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

  2. Cream together the softened butter and sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until combined.
  6. Roll the dough into balls about 1-2 inches in diameter and place them on ungreased cookie sheets.
  7. Flatten the cookie balls slightly and bake for 8-10 minutes until lightly golden around the edges.
  8. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For variation, consider adding chocolate chips, nuts, or dried fruit to the dough. You can also roll the cookie balls in sugar for a sparkly finish.
