Ingredients

  • 1 cup unsweetened coconut milk
  • 1/2 cup Greek yogurt
  • 1/4 cup sweetened shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 banana, sliced
  • Optional toppings: whipped cream, additional shredded coconut

Instructions

  1. Mix the oats, coconut milk, Greek yogurt, shredded coconut, honey, vanilla extract, and cinnamon in a jar or bowl.
  2. Stir well to combine.
  3. Add sliced banana on top, cover, and refrigerate overnight.
  4. In the morning, stir the oats and add optional toppings before serving.

Notes

Store the oats covered in the fridge for up to 3 days. If thickened, stir in extra coconut milk before eating.
