A vibrant and fresh Caprese pasta salad combining cherry tomatoes, mozzarella, and basil with pasta, perfect for picnics and potlucks.
Ingredients

- 8 ounces pasta (fusilli or penne)
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls, cut in half
- 1 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- Combine the cooled pasta, cherry tomatoes, mozzarella, and basil in a large bowl.
- Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled or at room temperature.
Notes
Best enjoyed fresh, but can store in the fridge for up to 2 days. Add red pepper flakes for heat or mix in other vegetables.
