A warm and hearty chicken soup with potatoes, perfect for chilly days or when you’re feeling down.
Ingredients

- 1 pound of chicken (breast or thighs), diced
- 4 cups of chicken broth
- 2 cups of potatoes, diced
- 1 cup of carrots, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Cook until soft, about 3-4 minutes.
- Add the diced chicken to the pot. Cook until no longer pink, about 5-7 minutes.
- Stir in the carrots and potatoes. Cook for another 5 minutes.
- Pour in the chicken broth and add the dried thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until potatoes and carrots are tender.
- Taste and adjust seasoning if needed.
Notes
For richer flavor, use homemade chicken broth. You can add any vegetables you like, such as peas or corn.
