Description

A warm and hearty chicken soup with potatoes, perfect for chilly days or when you’re feeling down.


Ingredients

  • 1 pound of chicken (breast or thighs), diced
  • 4 cups of chicken broth
  • 2 cups of potatoes, diced
  • 1 cup of carrots, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Cook until soft, about 3-4 minutes.
  3. Add the diced chicken to the pot. Cook until no longer pink, about 5-7 minutes.
  4. Stir in the carrots and potatoes. Cook for another 5 minutes.
  5. Pour in the chicken broth and add the dried thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until potatoes and carrots are tender.
  7. Taste and adjust seasoning if needed.

Notes

For richer flavor, use homemade chicken broth. You can add any vegetables you like, such as peas or corn.
